A texture analyzer measures how a solid or semi-solid sample responds to compression, puncture, shear and tension, then reports hardness, springiness, cohesiveness, chewiness and gel strength from that curve. It replaces the hand probe, the bench gelometer and the separate shear rig that a food laboratory usually keeps for each of those tests.
Seventeen built-in test modes cover gel strength, rupture, tension, adhesion, coating work, stress relaxation and full texture profile analysis, so a new product line rarely needs a second instrument. Displacement is specified at 0.001 mm on a closed-loop motor and dual linear rail. Food and hydrocolloid manufacturers, food laboratories, universities and cosmetic formulators use it for formulation screening, process comparison and batch release.

ADood is a food hydrocolloid manufacturer in Vietnam. Its application laboratory supports gelatin, carrageenan and curdlan lines that supply confectionery, dairy and surimi processors across Southeast Asia. Between 400 and 500 sample batches arrive each month, and each one needs a gel strength figure before production can release it or a customer can approve it.

Gel strength ran on a bench gelometer after 16 to 18 hours of maturation, one sample at a time, and a hand probe handled rupture while a shear box handled surimi gel. Three samples a day was the practical ceiling, and production waited four days for a release number. The brief asked for peak gel strength and area work, rupture force and distance, full texture profile analysis on filled jelly and 0.001 mm displacement.
The commercial side was harder. An imported analyzer had been quoted above the approved capital budget, its probes were sized for bakery work rather than 20 mm gel cylinders, and the service contract doubled the first-year cost. The shortlist came down to probe fit and English documentation.
The inquiry arrived as a sample list rather than a purchase order. We answered within one working day and asked for twelve samples with known values: six gelatin gels at two Bloom levels, three surimi gels and three filled jellies. Running them blind against the laboratory's own acceptance limits settled the probe selection before any commitment was made.
Two video sessions followed, one on method setup against GB 6783 for gelatin and GB/T 36187 for frozen surimi, one on writing custom programs for the reformulation team. The quotation specified one texture analyzer with a 20 mm cylindrical probe, a rupture rig, a tensile grip set and a second load cell, priced by line, with 30-day delivery. Two technicians were trained over two remote afternoons and their first independent run was reviewed the next morning.
Six weeks after installation the plant ran twelve gelatin gels a day on one texture analyzer, each with peak force, area work and rupture distance, and a release number was ready the morning after maturation instead of four days later. Re-test rate on out-of-spec batches fell because the whole curve, not just the peak, could be checked.
The laboratory added surimi rupture and filled-jelly texture profile analysis to its service list, work that previously went to a university in Ho Chi Minh City. The operation trace also satisfied the two GMP customers who audit the plant. "We stopped booking the gelometer for a whole afternoon," the application laboratory manager said. "Two Bloom levels, four replicates each, and the curves are printed before the shift ends."
If your laboratory, hydrocolloid plant or food ingredient business faces the same constraints, we can help. That means gel strength results that arrive after production has moved on, one bench instrument per test item, or a GMP customer asking for an operation trace you cannot produce. Most buyers reach us after comparing a food texture analyzer on paper and still not knowing how a full sample set gets through it in one shift.
Send a short list of sample types and test items, or a description of the standard you report under. We will return a texture analyzer configuration matched to that work, the probe plan and a quotation. Method guidance, English documentation and remote operator training are included.
